Classic Vegetable Dum Biryani Recipe

Classic Vegetable Dum Biryani,

  • Prep Time: 30 minutes
  • Cook Time: 45 minutes
  • Servings: 4 people
  • Difficulty: Medium

Ingredients

For the Rice Layer:

  • 2 cups aged Basmati rice (soaked for 30 minutes)
  • Zaykora Whole spices: 1 bay leaf, 3 green cardamoms, 4 cloves, 1-inch cinnamon stick
  • 1 tbsp ghee or oil
  • Salt, as required
    For the Vegetable Masala Base:
  • 2 cups mixed vegetables (carrots, French beans, potatoes, cauliflower, and green peas)
  • 1 cup thick yogurt (curd), whisked
  • 2 large onions, thinly sliced (for barista/fried onions)
  • 1.5 tbsp Zaykora ginger-garlic paste
  • 1 tsp Zaykora red chili powder
  • ½ tsp Zaykora turmeric powder
  • 2 tsp Zaykora biryani masala powder
  • 3-4 tbsp oil or ghee
    For Assembly & Garnish:
  • A pinch of saffron strands (soaked in 2 tbsp warm milk)
  • ½ cup fresh mint leaves, chopped
  • ½ cup fresh coriander leaves, chopped

Step-by-Step Instructions

  1. Par-cook the Rice: Bring a large pot of water to a roaring boil with the whole spices, salt, and 1 teaspoon of ghee. Add the soaked and drained Basmati rice. Cook on high heat until the rice is about 75% done (it should have a firm bite). Drain completely and set aside.
  2. Make Fried Onions: Heat oil or ghee in a heavy-bottomed pan. Fry the sliced onions on medium heat, stirring frequently, until they turn uniformly golden brown and crisp. Remove half of them for garnishing and leave the rest in the pan.
  3. Cook the Vegetable Gravy: In the same pan with the remaining fried onions, add the ginger-garlic paste and sauté for a minute. Add all the chopped vegetables and sauté for 2–3 minutes. Stir in the red chili powder, turmeric, biryani masala, and salt.
  4. Add Yogurt: Reduce the flame to low, add the whisked yogurt, and mix well to prevent curdling. Add ½ cup of water, cover, and cook until the vegetables are fork-tender but still hold their shape.
  5. Layer the Biryani: In your heavy-bottomed pot, keep half of the vegetable gravy at the bottom. Spread half of the par-cooked rice over it. Sprinkle a handful of fried onions, chopped mint, and coriander leaves. Layer the remaining vegetable gravy, followed by the rest of the rice.
  6. Final Touches & Dum: Drizzle the saffron milk and a tablespoon of ghee evenly over the top layer of rice. Garnish with the remaining fried onions, mint, and coriander. Seal the pot tightly with an airtight lid or aluminum foil. Cook on the lowest heat setting for 15–20 minutes to let the flavours infuse.
  7. Serve: Turn off the heat and let it rest covered for 10 minutes. Fluff gently from the sides and serve hot with cooling cucumber raita.

Pro Tips for Zaykora Recipes

  • The Perfect Grain: Always use premium, long-grain aged Basmati rice to ensure the grains don’t turn mushy or stick together during the dum process.
  • Customising Spice Blends: You can add 1 tsp of specialized spice mix like Meat Masala to your vegetable marination for a deep, intensely savory, and bold flavor profile.
