Ingredients

For the Crispy Pastry (Dough):

1 cup All-purpose flour (Maida)

1–2 tbsp Vegetable oil (Moyen)

½ tsp Whole cumin seeds & ½ tsp Ajwain seeds

Salt & warm water (as required)

For the Spiced Veggie Filling:

2–4 Potatoes (boiled & roughly mashed)

1 Carrot (finely chopped) & ¼ cup Green peas

2 Onions (thinly sliced) & 2 Green chillies (chopped)

1½ tsp Ginger-garlic paste

1 tsp each Whole cumin & Ajwain seeds

2 tsp Oil (for tempering) + Oil for deep-frying

Zaykora Premium Spices:

½ tsp Zaykora Turmeric Powder

½ tsp Zaykora Red Chilli Powder

½ tsp Zaykora Coriander Powder

½ tsp Zaykora Garam Masala Powder

Step-by-Step Instructions

Knead the Dough: Mix flour, cumin, ajwain, salt, and oil in a bowl. Gradually add warm water to knead a firm, non-sticky dough. Cover with a damp cloth; rest for 30 minutes.

Sauté the Aromatics: Heat 2 tsp oil in a pan. Splutter cumin and ajwain seeds. Sauté onions, green chillies, and ginger-garlic paste until soft and lightly golden.

Cook the Veggies & Spices: Stir in the chopped carrots and green peas for 2 minutes. Add Zaykora Turmeric, Red Chilli, Coriander, and Garam Masala powders with salt. Cook on low heat for 2 minutes.

Mix the Filling: Toss in the roughly mashed potatoes. Mix thoroughly until evenly coated with spices. Turn off the heat and let the filling cool completely.

Roll and Cut: Divide the dough into equal portions. Roll each into an even oval shape. Cut the oval horizontally into two semicircular sheets.

Shape and Stuff: Moisten the straight edge of a sheet with water and fold it to form a cone. Stuff with 1–2 tbsp of the cooled potato mixture.

Seal Securely: Dampen the inside top edges with water and pinch them tightly together to seal the samosa completely.

Fry on Moderate Heat: Heat oil in a deep pan. Fry samosas over medium-low heat, turning occasionally, until they turn uniformly deep golden-brown and extra crispy. Drain excess oil.

Serve piping hot with fresh mint and tangy tamarind chutneys!
